There's more than chocolate to cheer you up in these brownies!
"Beet" the Blues Brownie Bites
Who knew that it was this easy turn a beet into a mood-boosting dessert? These moist and flavorful brownies from Bastyr University dietetic intern Ellie Freeman (MSN/DPD '13) pair beets with flax seeds, eggs and cocoa powder in such a way that no one would ever know that the secret ingredient is a bright red beet!
4 large pastured eggs
1/3 cup unsalted pastured butter, melted (or coconut oil)
1 teaspoon vanilla extract (preferably homemade)
3/4 cup maple syrup
1-1/2 cups cooked beet puree (about 4 small beets)
2 tablespoon raw cream (or coconut cream)
1/4 cup coconut flour
1/4 cup flax meal
1/2 cup raw cocoa powder
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1/2 cup raw cocoa nibs or chocolate chips
Preheat oven 350 F. In a stand-up mixer or hand mixer combine first 6 ingredients in the order listed. In a separate bowl combine dry ingredients. Combine wet and dry ingredients and mix well. Grease an 8-inch-by-8-inch pan and pour batter into the pan.
Bake for 35-40 minutes or until toothpick comes out clean.
Prep time: 1 hour
Yield: 8-10 brownies
