Greens and Quinoa Salad
Quinoa is a whole grain that is typically grown in Bolivia and Peru. It can be purchased in the bulk section for around $4/pound. Quinoa has a higher protein content compared to other grains, making this a delicious and filling salad.
Makes: 4 – 6 servings
- 1 cup quinoa
- Swiss chard, 1 large bunch

2 teaspoons olive oil

1 sweet onion, diced

2 cloves garlic, minced

½ teaspoon salt, or to taste

1/3 cup raisins or currants

¼ cup fresh orange juice
Directions: Boil 1 3/4 cup water with a pinch of salt. Add quinoa and return to a boil, reduce heat to a simmer, cover and cook for 10 minutes. To check for doneness, tip the pot and make sure all of the water has been absorbed. Remove the lid and set aside
Wash chard leaves thoroughly and drain. Roll up the leaves like a cigar and slice crosswise, making thin strips. Heat oil in a large skillet over medium heat. Add onion and cook until soft. Add garlic and chard, continue cooking until chard is tender and bright green. Add salt. Remove chard onion mixture from the heat. Combine with cooked quinoa, raisins and orange juice. Serve warm or at room temperature.
