Cantaloupe Cumber Salad
Serves: 4
Try this salad for a crisp, fresh introduction to the flavors of summer. Great as a side dish to spicy barbecue.

2 Tbsp. fresh lime juice

1/2 cup plain yogurt

1 large cucumber, peeled and chopped

1 cantaloupe, peeled and roughly chopped

2 tsp. fresh mint leaves, chopped

1 Tbsp. honey

1/3 cup roasted pistachios, chopped

Salt
In a large serving bowl, whisk together honey and lime juice until incorporated. Add yogurt and mix in. Add cantaloupe, cucumber and mint; toss to combine. Sprinkle with pistachios, salt for taste and serve.
